Foodie Friday - A quick lunch idea
I make a quick version of a chicken salad. My DH and I had some on a bed of spinach the other day for lunch.
I found a similar recipe years ago, but I think I have changed it so much over the years to suit our tastes that it no longer resembles the original. If I have cooked chicken I will shred it, but have been known to use canned chicken. I drain a can of mandarin oranges and cut some green grapes in half. I mix it all with some mayonnaise until it sticks together.
A professional recipe writer is not in my skill set. I have been cooking so long now that I just add stuff as it hits my fancy. When I began cooking meals oh so many years ago I followed recipes to the letter. Umm…that no longer happens here.
I have served it on sandwiches, on beds of lettuce and just scooped into a bowl to eat spread on crackers. It is excellent in all the ways. I used to add sliced almonds to give it a crunch. Sliced almonds are usually not in my magic food cupboard so they have been dropped as a part of the recipe.
It is a quick, relatively inexpensive lunch. I almost always have all the items on hand in the house. It can of course be made with red grapes, but I just have always liked the color balance of the orange and green. Most importantly my DH enjoys it and usually asks for seconds.
