Burritos for Dinner
For years I have made a very simple burrito recipe. I found the original recipe in a cookbook by a woman named Joanna Lund. She wrote several excellent very easy cookbooks. She passed away quite a few years ago, but I believe you could probably still find her cookbooks. The recipe she had was called Macho Burritos. Not the name I would have chosen but it was the late 1990s/early 2000s. I have of course modified the recipe over the years!
You need a pound of ground beef, 1 can of tomato sauce, 1 can of diced tomatoes, salsa, shredded cheese and tortillas.
Fry the ground beef, add in about 1/2 the can of tomato sauce, a few tablespoons of salsa and the can of diced tomatoes. Place about 2-3 tablespoons of the mixture into the center of a tortilla and roll it. Place the rolled tortillas in a 9x13 baking pan. Cover the rolled tortillas with the remaining tomato sauce mixed with 2 more tablespoons of salsa. Sprinkle some shredded cheese on top. Bake in 350 degree oven for about 20 minutes.

It is not a very fancy dinner, but my family loves it. You can serve it with more salsa, sour cream, avocado, more cheese, any other sides you desire. I always think of it as good young person dinner - not too spicy or fancy and contains something besides chicken nuggets! Mothers of young children know exactly what I am talking about.
