Chicken Alfredo Roll Ups

The other week I was cleaning out my pantry, checking expiration dates and making a shopping list for the upcoming holiday baking. I found 3 cans of canned chicken that are due to expire within a month. I quickly put them in the front and added a few recipes to my meal planning that use cooked chicken. The first one I wanted to try was a new one to us, Chicken Alfredo Lasagna Roll Ups. it looked delicious nad used normal ingredients I had in my pantry.

I make my own alfredo sauce, it just tastes better than anything from a jar. It is easy to make and also very quick. My DH walked by when I was starting the recipe and he said it looked good already with the melting butter in the pan LOL.

While the noodles were cooking I made the filling and alfredo sauce.

The recipe called for 6 roll ups. I knew that was not going to be enough. I had an opened box of lasagna noodles with 9 noodles (why I had this opened box I have no idea, maybe my DD tried making something with just a few lasagna noodles?). 9 seemed a more reasonable number, also that is a lot of chicken mixture to try to stuff in just 6 little noodles.

It turned out okay, but I will probably not make it again. If I do I will have to play around with my alfredo recipe to cut the butter down. Actually if I make it again I might just use my regular lasagna recipe and sub in chicken for the beef. This had quite a lot of cheese and my regular lasagna has more sauce than cheese. I think we might like it better with red sauce/gravy. Never the less it got eaten and everyone was full after the meal.
