Chicken Pot Pies
I blogged about making homemade pot pies way back in February of 2022 - thought it might be time for an update. I cannot believe I was worried about the box of 100 5 inch aluminum pans I purchased from Amazon. I only have about 20 left - that is a lot of pot pies I have made.
Originally I made both chicken and ground beef. My DH enjoyed the ground beef but my DD did not. She is most likely to eat these pies so I have only made chicken since. I used the long weekend to make another batch for her. I have used the same recipe from the very first, little to no modifications have occurred. The first step is to peel and cut your potatoes and chicken. Place them into a large pot along with the frozen veggies and cook per the directions.
You also make a separate sauce per the recipe directions. Once everything has cooled and mixed I can begin filling the pies.
This time I ended up making 10 pies for the freezer. These do take a little time (mostly waiting for items to cool to complete). All told from start to finish it is probably about 2 hours, but that is not a solid work time. Most of the time you are waiting to complete the next step.
I wrap them with wax paper and foil. My DD knows the directions by heart at this point but I still write the temperature and time needed in the oven on the top of the foil. These are better than any you will buy in the store. They are perfect on a cold winter night for a quick snack or meal.
