Easy Burrito Dinner

I found a recipe for burritos you bake in the oven quite a few years ago. Over time I have adapted it to the family taste. The last time I bought tortillas at Costco I didn't pay attention to the package information. They ended up being Paul Bunyon sized. We are slowly using them up and I will really pay closer attention when I next purchase them.

All you need are tortillas, a pound of ground beef, a jar of plain tomato sauce, shredded cheese and salsa. Brown the ground beef and then mix in about 3/4 of the can of sauce and about 3 tablespoons of salsa. Scoop some of the mixture into the center of the tortilla and roll. Place the rolled tortillas in a 9x13. Usually I can stretch the mixture for about 8 normal sized tortillas. Once they are all in the pan cover with the remaining sauce and another 3 tablespoons of salsa.

Place into a 350 degree oven for about 10 minutes. Take them out and sprinkle shredded cheese on top and put back in oven for another 5 minutes.

You can serve with more salsa and sour cream on the side. Is this authentic burritos, no, but I can get it in the table in under 30 minutes. This is always a win if you work and have a family to feed.
