Easy Salad
Summertime and the meal prep is easy (or at least you hope not too hard). I usually try to include a salad of some sort with each main meal. Sometimes though I might be out of greens, but more likely I am just not in the mood for a lettuce chopping session.
My family, at least is just as happy with a "salad" plate.
I make a batch of ranch dip using sour cream and my own dry mix. Everyone can then just select the veggies they most want. My family still gets their veggies and they never miss the lettuce portion.
I do the same for a fruit salad.
The platter is one I picked up a thrift store quite a few years ago. It "dresses" up the serving. This is an easy way to serve all the fresh fruits and vegetables of summer. Your family might not even realize they are eating something healthy.
