Modified Chicken Peanut Sauce
I have used this recipe for quite a few years to make a delicious beef stir fry whenever I need a quick dinner. I wanted to try it again but with chicken. I cut up about a pound of skinless, boneless chicken breast and cooked it as I would the beef (in oil). I then made the sauce and added it to the skillet.
It turned out delicious and all the family raved over it. I also think it made much more than when I use a pound of beef for some reason. Nice to know I can use a tried and true recipe with just a little change.
