Mongolian Chicken

Looking for a quick easy weeknight dinner that is also gluten free? I found it! Mongolian Chicken. This really can be on the table within 45 minutes and does not use any super exotic ingredients (sesame oil might be the only one).

One trick to frying chicken is to try to cut the pieces in a uniform size. This is easier written than done, but does help in the cooking. I simply cut the chicken and shook it in a bag with cornstartch.

The sauce is also easy. I never have fresh ginger on hand (I don't use it enough to justify storing it in my fridge). I used a little powdered ginger and it worked fine. I did use soy sauce which is not gluten free but you can sub in Braggs Amino or other gluten free soy sauce.

Now because I can never leave well enough alone I steamed some fresh green beans and added them into the mix. It turned out delicious (DH had 2 helpings). Quick and easy dinner.
