Pancake Bites

One of the items I love to make in my Instant Pot is pancake bites. Technically these can be frozen. I write technically because every time I have made these we have no leftovers! Hang onto your hats I actually follow this recipe as written - I know, who am I?

These are the silicone molds I use. They are yellowed due to the oil I sprayed in the mold so the little delicious pancake bite will slide out of the mold when done.

I love to put blueberries in mine. But I am the only one in my family that will eat the blueberry version. My family prefers a sprinkling of mini chocolate chips.

Yes, that is bacon you see also on the plate. We just eat them as is, no syrup needed. You can also use these molds to make egg bites and other delectables in the Instant Pot. I tried egg bites once. They turned out yummy according to DH but I am not a super big egg fan so I didn't eat one. I also tried making little pumpkin pie bites in the molds. They did not turn out as pictured and were not good. I decided if I wanted pumpkin pie I can just actually make a pie. You win some you lose some. Frankly, we are just sp happy with the pancake bites we need nothing else.
