Peaches and Pork

Well I found a recipe for pork loin with a peach sauce. It turns out that I had peaches, but no pork loin and no peach preserves. I improvised. I cut up a few pork chops I had and thinned them with my meat pounder. I sprinkled them with salt and pepper and fried them in my cast iron skillet. While they were finishing (it only took a few minutes due to the thinness) I cut up the fresh peaches I had. I placed those in the skillet with the pork and put a lid on the whole thing. I cooked until the peaches had glazed slightly and released some of their juices.

It was quite tasty despite having little in common with the recipe inspiration. It was devoured at the table so it must have been good. It was not as sweet as the original recipe which is perfect for my famly.
