Sengalese Peanut Stew

I ordered a quarter of a steer a month or more ago. This order always delivers quite a bit of chuck roast/stew meat. I decided to use some of it to make a Sengalese beef stew. I have made this at least once before and we really enjoy the meal. It reheats quite nicely and is a perfect lunch at work meal.

I had a packet of peanuts in the cupboard to sprinkle on top. I served it over rice with air fryer pierogies. It got eaten so it must have meet with approval.
