What's For Dinner - Corn Chip Chicken
My MIL handwrote out a recipe book for her son when he moved out on his own. This lovely book contains all her most prized recipes. Being married to DH has its advantages :) This is always a favorite at the dinner table and easy to prepare. Place raw chicken tenderloin pieces in a 11 x 7 x 15 Pyrex glass baking pan.
Cross it off your Bucket List
Use a can of cream of mushroom soup or cross something off your bucket list and make your own. A few years ago I mastered the art of making my own cream soups and I have never looked back (at least not the cans of cream soup on the supermarket shelf). Making your own is super easy. Hey, I think I just may have discovered another blog post idea.
Add a very generous tablespoon of your own taco seasoning. Of course, I make the taco seasoning up by the jar (but you can use a package of taco seasoning from the store). You never know when the zoombies will appear and a girl will need her own jar of taco seasoning. Mix in some shredded cheese blend and a smidgen of milk. Pour the mixture over the chicken in the pan. Top with a generous covering of corn chips (AKA Fritos), cover and bake for 30 minutes at 350 F.

After 30 minutes take off the cover and sprinkle more shredded cheese on top and put it back in the oven for about 8-10 minutes. Viola, you have a great main course meal. You can serve it with rice, but most of the time I just serve as is with a few select sides and I never hear any complaints!

Warning: Be on the lookout for those who will sneak into the kitchen and try to steal the chips off the top before it is served.
