Where's The Beef?
The other day I decided to give the chest freezer a good clean out. This allows me to see what items I actually store inside this massive thing. After the clean out I realized we have way too many beef chuck roasts. I need to use them up to free up more space in the freezer. I just put in a meat order to be delivered at the beginning of April.
This all sent me searching for some new recipes on how to use chuck roast besides in a pot roast. Luckily for my family I think I found some winners. My first new recipe was Guinness Beef Stew. How can you go wrong when one of the ingredients is beer.
The first step was to cut the chuck roast into chunks for stew. The chuck roast I defrosted was so large that I after cutting it all up I had enough for another stew dish. I put half of the chucks aside for dinner another night.
I was a chopping machine with vegetables and herbs. The recipe calls for celery which my DH avoids so I put in a couple of extra carrots.
The recipe is quite nice because it gives you 2 options for cooking - slow cooker and instant pot. I selected the slow cooker version. It is just so comforting sometimes to have dinner in the slow cooker in the morning. You know you will not have to prepare much more at dinner time.
In addition to the Stout I also used a jar of my own home canned beef stock.
The stew was delicious for dinner and heated up even better for lunch the next day. This recipe is a keeper.
