A few months ago Adventures of A Nurse posted a recipe for Dorito Chicken. I tried it and it was a hit. I made it again using some precooked chicken I had in the freezer. The Doritos came from a box of chips i bought at Costco for the start of school. It used up not only the chicken but the bags of chips laying around. Of course I changed it a little. I did add the black beans, but was out of frozen corn so that was not included. I would probably leave out the Rotel tomatoes the next time and just use regular diced tomatoes. It was a little on the spicy side.

It is always nice to have some good easy casserole recipes for those nights when you need a semi-quick dinner to fix after work. Like most casseroles it heats up well the next day for lunch.
