Freezing Soup

Not all soups are good candidates for freezing (stay away from cream soups, they do not thaw nicely). Frozen soup does not taste quite as good as when it is first made, but it certainly works. I tried a copycat recipe for Minestrone Soup (supposed to be an Olive Garden copycat – I’m not sure how closes it comes since I have actually never had the soup there).

It had lots of fresh and canned veggies.

Just ready to start cooking

I cooked it for a little over 2 hours on high in the slow cooker. After the 2 hours was up I added small shell pasta and fresh spinach.

I served it with a loaf of French country bread I had picked up at Costco a few days ago. We had leftovers since it made quite a large pot. I poured the leftovers in freezer safe containers and popped them into the freezer. It should be easy to reheat and serve again.
