Another Foodie Friday
What - 2 weeks in a row with the dinner cooking! What has come over me. I provide a home cooked meal almost every night (except Monday - my off cooking night).
As an aside I really do not understand people (ie younguns) who claim they have no time to cook dinner. Crabby older person lecture now arriving at Gate B12. Planning meals appears to be a lost art. I have a stable of good, easy recipes that use general all purpose ingredients. It takes me less time to prepare the meal than it does to stop and pick up a take out order or order a food delivery. Plus I know exactly what I am eating and get lunch for the next day. Eating out or ordering food on an app is expensive. Lecture over - we will now resume out regularly scheduled post.
I finally located some decent looking mushrooms at Costco the other day. This meant I was able to make Chicken Diana. This meal takes less than 30 minutes to prepare. It seems like a very fancy meal for a minimum of effort. Fell free to inform your partner about the hours you labored over this meal if they are not near you when cooking - it will be our little secret.
It of course has a secret ingredient. I NEVER buy cooking sherry - it should be banned. If you need sherry for a recipe spring for a bottle of real sherry. It tastes much better in your recipe and you can always drink it if you turn out not to like the recipe.
The sherry is used in the sauce. I always try to serve sauces on the side. I dislike having my hard dinner efforts smothered and covered up with a sauce. This dish is a winner - it was gobbled up by all of my hungry little birds I feed for dinner.
