Apple Pie Thanksgiving Prep
I work full time, this means my ability to cook a full Thanksgiving feast has to be chopped into manageable pieces. I try to make some dishes/deserts ahead of time and freeze them so there is maybe once less thing to complete before the big meal.
This week it was mini apple pies. I actually made 2 kinds. I tried one batch with puff pastry and made them like hand held mini pies. They may not look like they are professionally done, but they are tasty.
I also used up the remaining apple pie filling I made (from scratch) in mini pies. I have been making this same apple pie filling for a few years and it works well and is easy to make. The longest part is the peeling of the apples.
