A Great Side Dish
Over the past few months I have been purchasing brussel sprouts. They are an interesting vegetable and probably an acquired taste. My husband wanted to try them quite a few months ago. At first, I simply roasted them with olive oil and a very small amount of kosher salt. Later I discovered a recipe which of course I cannot now find to link. We are enjoying them at least once a week as a side dish.
All you need are bacon, brussel sprouts, balsamic vinegar, feta cheese and a cast iron skillet. Cut the sprouts in half. Chop up a few slices of bacon. Fry the pieces in the cast iron skillet. Once the bacon is done remove from pan and place to the side. Do not remove any of the bacon grease. Place the sprouts, cut side down in the cast iron pan. Let them cook for about 4-5 minutes.

After a few minutes, stir the sprouts with a spatula and continue to cook for another few minutes.

You can see how the cut sides are browned. Remove from heat and immediately sprinkle about a tablespoon of balsamic vinegar over the sprouts. The pan will sizzle. Add back in the cooked bacon bits and stir. Just before serving sprinkle the sprouts and bacon with feta cheese. Enjoy. It is a relatively quick side dish. The longest part of the whole dish is cutting the sprouts.
