Adding to the Freezer
I put up 3 freezer meals today. I bought the pesto, chicken tenderloins, parmesan cheese and spinach on my weekly trip to Costco. I made the old standby Chicken Pesto Parmesan. I think I figured out that each meal costs between $6-7 per entree. Each freezer meal serves 6. If my ability to do math has not left me that means each serving is about $1 and some change. Not too bad and way cheaper than anything we could buy for either lunch or dinner.
It's a favorite because it is an easy dinner to get on the table. I can get a meal on the table within 30 minutes!
I also vacuum sealed some cooked chicken I had purchased at Costco into 3 different packages. Costco sells huge bags of shredded cheese. I had picked up some mozzarella and mild cheddar during the same trip. I repackaged and vacuum sealed those and placed them in the freezer.
I needed a batch of cream of mushroom soup. I got out my chopper and made up the ingredients for 3 batches. I made one right away to use in the dinner for the night but froze the other 2 little bags for the next time I need cream soup.
Bit by bit you can fill your freezer. All of that work took me about an hour in the morning.
