Apples & Pork
Apples and pork always seems like a winning combo. I found a recipe, but had to adapt it to what I had on hand. I had a pork shoulder roast. I cut slices of the roast and used those as the pork chops. I had a few apples in the house. Sliced them and used those. It took a little larger to cook due to the thickness of my "thin" pork cuts.
The sauce on the top was a special treat and really helps make the meal. It was declared very delicious by my food critics. It will go into the rotation. I often have more pork shoulder roasts then pork chops. When I purchase half a pig it seems like I get quite a few roasts (or maybe it is just that they seem like a lot since they take up more space in the freezer than chops). The roast had a bone in the middle. I saved the bits I could not cut off and will be making pork stock from them at a later date.
I served it with some french fries and a strawberry salad (which will be another post for another day).
