Canning Clean up/Out

One of my goals which you can read about on Sunday in my New YOP plans is a general clean out of the canning goodies.

Canners know it is always a good idea every few months to check the seals of canned jars. If the seal is loose tear the lid off and throw the item inside the jar away. If the seal is loose this allows botulism to begin to grow inside the canned good. Same story if you see a bulging tinned canned good on a market shelf.

I wanted like canned goods with like canned goods so I could see what I currently have in stock.

The beginning of the sort. Like goods with like goods. This also allowed me to see if I needed to spend time canning anything new because we only had a few jars left.

The preserves table. We could eat a jar of jam from now until December and still would have leftovers I believe.

After everything was checked and sorted I put it all back in my canned goods area. I realize that we really only use and enjoy the following canned goods: stock in all its forms, pineapples, pickled beets, and preserves. I have a few random jars of baked beans (which I plan to make again - they are tasty) and lemonade concentrate. Now I know where to concentrate my efforts.

I only found one jar with a broken seal. Lots of jars were cleaned and sorted. I have more than enough canning jars to last at least 3-4 canning seasons. Hopefully it will be easier to locate what I need after a good clean and sort.
