Chicken A La King
Chicken a la King was on my to be canned list. Then I remembered I think I canned a similar meal a few years ago and it was not one of our favorites so a change of plans. From canning the white chicken chili I still had some poached chicken left over that was not needed. After defrosting the chicken leftovers I used them in this version of chicken a la king.
I did not have any frozen peas (that I could locate in the freezer) so I used corn instead. I also forgot the majority of the milk and cream. This worked out fine because I just added more chicken stock to take its place. No one was any the wiser.
It was delicious. I served it over rice with a side of roasted cauliflower. It comes together quite quickly so this would work for a weeknight supper.
