Chicken Skillet Dinner - Francaise
A new fun blog I have recently discovered is kitchenfunwithmy3sons.com. She has lots of recipes and every one I have tried so far has been a winner. The latest one we enjoyed last week was chicken francaise.
A week or so ago one of my students traveled to visit family out of state and returned with delicious hand picked citrus. They were kind enough to gift me a few citrus items (oranges, lemons, grapefruit). One of the fresh lemon was used for this recipe. Since the citrus was not commercially prepared I felt safe in grabbing the lemon peel off of the lemon before cooking. I zested the lemon peel to add to my jar of dried lemon peel. I have been enjoying the fresh oranges out of hand to help build up my vitamin C levels.
The recipe called for white wine which I did not have so just used a jar of my own home canned chicken stock. The addition of dipping the chicken in an egg parmesan mixture before frying added a delicious and different taste element.
I served it with roasted cauliflower. It was not the best plating I have ever done of a meal, but we liked it. I thought it was pretty good considering I was still feeling only slightly better from my cold when I made the dinner.
