Comfort Dinner
I made chicken tetrazzini for dinner the other night. I had premade the cream of mushroom soup (I know the recipe includes cream of chicken, but the mushroom works just as well and no one I feed can tell the difference - chef secret). I made half of the amount of the recipe. As it was we have enough leftovers for a few days of lunch. It is written as a freezer meal, but I do not think I have made any to actually put into the freezer. I just cook it when I make it.
Here it is just as a put it into my dirty oven (ugh:( I roasted beets (and also made fried brussel sprouts as the 2nd side dish). It was the perfect comfort dinner on a cold night.
