Freezer Cooking for the Week
I bought the supplies to make a few freezer meals. It is getting closer and closer to back to school time. i need some quick dinners in the freezer to pull out to make during the first 2 weeks.
There is no tired like the first week of kindergarten tired (for both students and teacher). Thinking up or even doing much meal prep during the first week of readjustment is just not what I want to do during that time.
I bought some boneless chicken breasts for a little over $3 a pound. I used a pound in each of the meals. The only other supplies I bought to make these was a bottle of pesto and a pound of baby spinach. Both of which I purchased at Costco and they were not off the wall pricey. The remainder of ingredients I had in my well stocked pantry. At the most I think each of these is about $4-5 per meal.
Used my printer to put the labels on white copy paper. I like having the labels. In the past I would think, oh yeah I will remember what this package contains in my freezer in a few weeks - delusional. I can't remember and no one likes a mystery meal.
I cut them up and tape them onto the sealer bags. I'm sure I could print them on stickers but paper and tape seems to work just as well.
I then place them in my bag holding stands. These just make me so happy every time I use them. It's the little things people.
In the end I was able to make 3 batches of Pesto Parmesan Chicken, 2 batches of Peanut Lime Chicken and 1 portion of Chicken Tikka Masala. These are all repeats of previous meals we have devoured. As a bonus all but the Tikka Masala can also be done on the stovetop, not just in the crockpot. In addition the other night for dinner I made chicken pot pies. My recipe makes 8 individual pies. We ate a few and the rest went into the freezer. I will soon have a hungry after school student. The potpies cook up very nicely in the air fryer. I would rather have her eat a homemade frozen meal then something from a box.
