Freezing Potatoes

If you have too many potatoes here is an easy way to keep them for the freezer. I have made freezer mashed potatoes which I find okay, not as good as "fresh" mashed potatoes. They are fine in a pinch. My family tends to prefer twice baked potatoes. I really don't follow a tried and true recipe for these. I am sure there are lots of recipes on the internet if you are so inclined to look.

I simply put a lot of potatoes in my oven to bake. We usually will have a few on that night for dinner. The remainder I cut in half and scoop out the potato part. I then mash and mix them with butter, some milk and shredded cheese. Once the filling is complete I place it back into the potato shells. I wrap each potato half in a bit of waxed paper and place them into a large gallon freezer bag. I put them in my freezer.

Whenever we would like a baked potato I simply take them out and place on a tray. I bake them at 350 F for about 30-40 minutes. Toward the end of the cooking time I will sometimes sprinkle them with shredded cheese. I bake them right from frozen.

They are especially nice to have in the summer. You don't have to heat up the house baking potatoes in the oven. I consider a serving to be half of the potato and pull out as many as I have sitting for dinner at the meal.

They must be alright in the taste department because my family never complains about them. Below is a photo right after they have been taken out of the oven and before being served.
