Ground Pork

I order meat directly from the source, a semi-local farmer (just one state over). If you can find a ranch or farmer that offers this service in your area I highly recommend it. Anywoo, until I started buying my meat this way I don't think I had ever seen or heard of ground pork.

We get quite a few pounds in each pork order we place. At first I had no idea of what to do with this new delicacy. Pinterest to the rescue ( on my account I have a page just for pork). Over the years I have built quite a few very nice recipes using ground pork.

One of the best things you can make are Swedish meatballs. If you have ever been to Ikea you know all about Swedish meatballs. Go an internet search and you can find numerous "copycat" recipes. If you want to make them from scratch I have used this recipe numerous times. They always turn out delicious.

I recently discovered a recipe to make the meatballs in the Instant Pot. You know I jumped all over that one to try. I did not use the gravy mix called for in the recipe. I just made my own gravy.

One of the reasons I really like making my own Swedish meatballs is the sodium level is much lower. I noticed after I ate them at Ikea I was always so thirsty for hours afterwards.

If you can get your hands on some ground pork try making a batch of Swedish meatballs for dinner.
