Peanut Beef Stew
In the continuing quest to use up the million chuck roasts I have in the freezer I found a new recipe that you can make in a crock pot, stove top or instant pot, Maafe (Senegalese Peanut Stew). It is delicious, in fact I have made it twice already.
I defrosted the roast and then cut the meat into small chunks. I wanted to use the slow cooker since the beef is tougher than chicken. The recipe allows you to use either chicken or beef. If I make it with chicken I would select it as a stovetop meal. In my experience, chicken and slow cookers are not usually a good combination - the chicken dries out.
I "marinated" the beef, it was really just a rub you put on the beef pieces. The beef was then fried in a skillet before becoming the beginning layer of the stew.
I followed the directions almost to the letter except for not adding super spicy items. To serve I added peanuts to the top and placed it on a bed of rice.
It reheated quite nicely also for lunch the next day. It was family approved!
