Pina Colada Jam

One of the favorite jams I make is pina colada. It is just a bright spot in a dreary winter day. I used the pineapples I bought last week and made 2 batches. By the way you should never double a jam recipe. Yes, it is more work to make each batch separately but double batches of jam are never recommended.

Here are the main ingredients, minus the sugar needed. This jam has a longer boiling time hence the liquid pectin. It is so heated by the time you add the pectin that if it was in powder form it would just clump up. Think of what makes lumpy gravy and you get the idea.

You do use real white rum in making the jam, but it is cooked off so you can't get drunk eating this jam.
