Plain Vegetable Sides
Over the years I have found a few ways to get vegetables eaten at dinner. We are not a big sauce family, plain is best. My daughter loves fresh steamed green beans. I simply use a steamer basket in a saucepan.
Usually no leftovers when I serve green beans. Another favorite of my DH is roasted cauliflower. I simply cut the cauliflower, sprinkle with olive oil and kosher salt. I bake in the oven at 350 degrees F until soft (usually between 15-20 minutes).
I roast quite a few vegetables. Soggy vegetables from a can are not allowed. Maybe it is because I grew up a farm where I had access to fresh vegetables. I cannot stand canned vegetables, I don't even can them myself.
