Potato Candy
Over a year ago a recipe for potato candy appeared on my pinterest feed. It took a while, but the recipe was finally tried. I have never heard of making candy from potatoes. According to the blog entry I read next to the recipe this is a great Christmas candy recipe. I had to read over the recipe a few times before I realized you had to make it with plain mashed potatoes. The other day I boiled potatoes to make potato salad for dinner. I kept out a handful of the boiled potatoes to mash.
Basically this is A LOT of powdered sugar (or confectioners sugar). I never did get the dough to the consistency of playdough before I ran out of the 3 pound bag of sugar I had on hand. They have firmed up by living in the fridge, but not the most delicate candy I have ever made.
Not the prettiest things I have ever made either, nothing like the pretty ones on pinterest. They are also so sweet they almost hurt your teeth to eat them. I am not saving the recipe, but it was an experiment for a Saturday afternoon of working in the kitchen. Sometimes you make a winner in the kitchen and sometimes not - this was a not time.
