Prepping Soup Mix

I have been making my own cream of mushroom soup for a number of years. I use it as soup base in many casserole recipes. One of the ways I am able to make it quickly involves the freezer. I pre-make little portions of chopped onions and mushrooms.

About every month or so I just pull out my mini chopper. I am on my second of these Black and Decker mini choppers (I buy them from Amazon). I wore out the first one.

I cut up a whole onion and place it into the chopper to do its magic. I do the same with whole mushrooms.

I then place the "ingredients in separate bowls.

I used some of the onion in a dinner recipe on the night I was completing this chore. But all the rest went into tiny little bags. I then put these in my freezer.

Whenever I need cream of mushroom soup I pull out a packet and then am easily able to add the other ingredients to make a soup base. The secret is the mini chopper. It chops the onions and mushrooms very finely. I gave the recipe and more details on the chopper last February on my blog.
