Skirt Steak

In my quarter of a steer meat purchase I receive cuts of meat that are difficult to find in the grocery store (or more likely just named something different). Over time I have discovered delicious and tasty ways to prepare these cuts.

I was unfamiliar with skirt steak. We raised pigs on the farm, not beef. After some trial and error I finally found a wonderful marinade recipe on the internet. I have made it a few times and it is always delicious.

I served it the other night with a shrimp platter and green salad. There were no leftovers of the steak. It always turns out tender and flavorful. I of course cooked it in my cast iron pan.
