Swedish Meatball Casserole
My family loves themselves a good Swedish meatball. A recipe came across my pinterest feed for a casserole. Once I looked over the recipe I was all in to try it.
I made the meatballs from scratch and used a pound of ground pork and a pound of ground turkey. I made about 50 meatballs and flash froze them. I used about half of them to make dinner the other night.
I believe my meat selection lead to a lighter looking meatball than in the original. I also did not have half and half, we are a full cream family. I used whatever pasta I had in the cupboard.
As you can tell from the picture above I continue showing off my fantastic picture taking skills, You're welcome LOL.
It was quite delicious and reheated quite nicely for lunch the next day. Bonus, I have another 25 little meatballs in the freezer to use later. I served it with a green salad and pickled beets.
