Using What You Have
With all the rising prices I am making even more of an effort to use up all leftovers. I have always been frugal but the price of food and fuel has made me even more careful with the budget.
Earlier in the week I served skirt steak with a shrimp platter I had picked up at Costco. The steak had no leftovers but I did have some leftover shrimp.
I decided to make a simple, but delicious summer meal. I boiled some angel hair pasta (what I had in my cupboard) and made an alfredo sauce with heavy cream, butter and fresh grated parmesan cheese.
Once the sauce was completed I added in the pasta and shrimp I had left. I gently heated all the ingredients together for a few minutes over low heat.
I served this with a small green salad. It was a hit with the family. It was not overloaded with shrimp, but seemed to be the perfect amount.
