Vindaloo Pork Curry - Meal in a Jar

My family does enjoy a good curry now and again. I make a freezer meal version of Chicken Tikka Masala that they absolutely devour. I found a recipe for Vindaloo curry on the website Creative Canning. I have canned a few items from her website and she provides tested, safe recipes.

I bought pork loin on a super sale so I had some to use to make this curry. As with all canning you need to follow the recipe as written. This is not the time to try new things. The only item I left out was the cayenne pepper. We like curry, but not too spicy a curry. I felt fine omitting this because it stated in the recipe it was just included for heat.

I did not add any vegetables to the curry. If needed I can probably add vegetables later at serving time. I canned using my digital pressure canner. The more I use this the more I like it.

The jars all sealed and are now safely residing on the food storage shelves. Hopefully it will taste as good as it looks.
