What's For Dinner - Chicken Drumsticks

This is a great all in one pan type of dinner. It is really nice to fix in the wintertime because you can add a little heat to your home by using the oven for over an hour! I got the original idea from the website letthebakingbegin, but I have adapted it and changed it to fit what my family likes.

I often do this with recipes (which I think all cooks do in reality). The first time I try a new recipe I try to follow it as written, but then I start thinking. Can I adapt the recipe to fit my family's flavor profile, can I add or subtract ingredients, either due to personal preference or allergies? For example, many recipes call for sugar in the ingredients. I usually half the amount of sugar called for or leave it out all together in many cooking recipes. My family does not enjoy overly sweet items so this works for us.

I of course, still use chicken drumsticks and potatoes, but have been known to add other root vegetables. Instead of the spice mixture included in the original recipe I sprinkle on a spice mix called Revolution I purchase from Penzeys spice company.

Why we like this recipe

  1. It takes only one pan (less to clean up)
  2. Easy to obtain ingredients
  3. It is a put it in the oven and set the timer recipe (nothing to fuss with as it cooks)
  4. You can add or subtract the number of drumsticks you need and it does not change the recipe

The dinner got eaten before I could grab a picture of the finished product. Everyone was hungry. Trust me, it was delicious!
