WonTon Soup
A new to me recipe floated across my pinterest feed a few weeks ago - Wonton Soup. We have purchased this before at restaurants, but frankly I am always disappointed with the amount of wonton to soup ratio.
The last grocery run I picked up a package of frozen wontons, bok choy and mushrooms. I made our first batch the other night for dinner and it was delicious.
I used my own home canned turkey stock as part of the base. The next time I make it I think I will chop up the bok choy better. I thought it would cook down and become limp, it did but not as much as I was expecting. I think I know why the recipe calls for shitake mushrooms (depth of flavor). For cost and ease of use I will probably just use the everyday white mushrooms I pick up every week to add to various dishes. I ran into a deal at the market on the wontons. If I bought 1 bag I got another free. Our freezer now has 2 bags of wontons. Since I was controlling the number of wontons in the soup I made sure to put plenty into the pot.
It is a quick and easy dinner. It also reheats nicely for lunch on the next day.
