Sweet Potato Thanksgiving Prep
We love sweet potatoes (or yams), but usually they get a little bit of neglect on our Thanksgiving table (too much other stuff). I find if I just make a few twice baked sweet potatoes that is usually enough. This works well if you have a guest who does not want to eat white potatoes.
I made a batch this weekend. We eat a few for dinner but the rest went into the freezer. The recipe does not discuss freezing them, but I have and they work perfectly reheated. I put a scant amount of walnut streusel on the top. We find them plenty sweet enough without the added topping.
It is nice to have a batch in the freezer to pull out for dinner even if it is not Thanksgiving.
