Canning White Chicken Chili

A local grocery was having a special on boneless chicken breast and I had all the other ingredients in the cupboard to can a meal in jar. One recipe I wanted to try was white chili which is made with chicken.

I first had to poach the chicken breast. While they were doing their thing I cut up the onions and green pepper needed. I had bought some frozen corn to add to the recipe, but after it was all canned I realized I did not include it in the jars. Oh well, I can add it when I reheat the dinner. Also my DH is not the biggest fan of corn to be honest.

Here is the chili all ready to be placed into jars. After filling 7 pints I still had 4 cups left that would not fit into the canner load. We may have the "leftovers" for dinner or I can freeze the remainder.

All have sealed and I used my new digital electric pressure canner. Hopefully this will be delicious this coming winter.
