Freezer Sloppy Joes
I have had a go-to-recipe for sloppy joes for many years and it has never failed me. It is based on a recipe I found in 2005 on the website 30 Day Gourmet. Over the years it has morphed into something different and more suited to my families taste than the original.
You will need a pound of ground beef. I assume you could make this with ground turkey or a meat substitute, but I have never tried. You need to fry the ground beef. If you desire you could add a little bit of onion and maybe some bell pepper.
Once your ground beef is cooked add a pinch of garlic powder (if a specific amount I would try 1/2 teaspoon), a squirt of prepared yellow mustard (again probably about a teaspoon), sprinkle some worcestershire sauce on top (again probably about a teaspoon), some brown sugar (about a teaspoon), about 3/4 cup of tomato ketchup and some salsa (depend on your family for the amount and heat - a good starting point is 1/4 cup), I do not add salt and pepper (there is more than enough salt in the mustard, ketchup and salsa). Mix together in pan and set to simmer. I simmer it about 30 minutes.
It freezes very well. It is also a great camping meal if so inclined. I have made it before camping trips, frozen it and then taken it in the cooler. It will defrost after about a day or so in your cooler and makes a delightful campfire dinner when warmed over a cook stove.
