Freezing Bananas

My DD and I both enjoy bananas. My husband refuses to eat them unless they are in baked goods. Even then it can be hit or miss. Some weeks I have leftover bananas that are a little too ripe, but not enough time to do anything with the culprits. I stash them in the freezer. Yes, they look absolutely horrible once frozen, all black skinned and shrunk. The flavor is not really changed and they are perfect once defrosted for adding to baked goods.

I was looking for something in the freezer (pretty much a daily event) and I rediscovered a few of my frozen banana friends. I used them to make Banana Chocolate Chip Bread. My DD especially loves this version of banana bread. It certainly hits the spot if you have a chocolate craving. I have made it numerous times and it always turns out quite nice. This recipe calls for 3 mashed bananas. I dislike banana recipes that only call for 1 mashed banana. Who has only 1 overripe banana in their kitchen? If you are going to make a banana flavored item you need at least 2-3 bananas to get the actual flavor. Otherwise just wave the banana over the bowl and call it a day. But do not call whatever item you are creating banana anything.
