Pineapple Candy?

I used many of the pineapples I bought to can and make preserves, but I wanted to try making dried candied pineapple.

I looked online for quite a few different recipes. One took over a week to prepare the pineapple. That might work in the summer when I am on vacation but not currently. Basically I cobbled some of the recipe ideas together.

I cut the pineapple into pieces, made a sugar solution and slowly simmered the pieces in the sugar solution for a little while. The sugar solution was drained off and all the pieces were placed on the dehydrator trays.

After about 10 hours I had lots of candied, dried pineapple.

The pieces are not covered in sugar and not too sweet. They are slightly chewy and delicious. A few are sprinkled in my morning oatmeal and they work perfectly. I am not sure I would ever candy pineapple again. They might be quite nice added to some sweet buns to see if they bake up nicely. Just a fun food experiment.
