Rice Pudding

My DH made rice for dinner the other night. It turned out to be much more than we needed. I decided to try my hand at making rice pudding. My father loves rice pudding and I wanted to use up the leftovers. Also a work friend gifted me a bag or two of raisins that she was not using.

All the needed supplies laid out.

The extra cooked rice and milk mixture which I heated on the stove. I added the spices and a beaten egg (slowly so it did not get cooked).

It turned out quite nice, but I am the only one in the house that ate any of it. My DD was totally not interested in even trying it. My DH did take a taste but declared it too rich.

It made a nice desert option for my lunch during the work week.
