Swedish Meatballs
A few years ago my area finally got large enough to build an Ikea. My classroom is a testament to the fact:) We enjoy their Swedish Meatballs whenever we shop. I must admit though I find them too high in slat content. I am thirsty the entire rest of the day. A few years ago I found a hack recipe for the meatballs. Now when we go shopping I skip the meatballs and get something else at the cafe.
I have made this recipe at least a half dozen times. It makes a great portion, lots for dinner and for lunch the next day. I do not usually include the onions and I just use the entire egg (I always think I am going to find something for the remaining egg whites, but that rarely happens so I now just include the entire egg). Do not forget the nutmeg and allspice, I think those might be the secret ingredient in the meatballs.
I use my own beef stock which might also help the sauce be so tasty. These get eaten with no complaints and often second helpings. For a weeknight meal I might try making the meatballs and freezing them. Thaw them safely in the fridge and then proceed with the remainder of the recipe. Pre making the meatballs would make it a very doable weeknight dinner.
At the cafe they are served with mashed potatoes but I usually cook a pasta noodle. My DD prefers pasta noodles over mashed potatoes.
